Jasper Hill Winnemere


This is a new cheese featured on my cheese board. It is a complex cheese. It is an old world, raw milk, washed rind cheese from Jasper Hill Farm. It is wrapped in spruce wood and washed in a lambic beer. The spruce gives this cheese a woodsy flavor. Jasper Hill makes some of my favorite cheeses. I always have at least one or two of their cheeses on my board.

  2. It's pretty amazing and FUNKY. It's one of those cheeses that smell so bad but as soon as you get into your mouth it's smooth,creamy and woodsy. It stunk up my whole walk in and kitchen.

    It is a seasonal cheese. I basically bought that last of it from my cheesemonger. I am sure you could find some somewere. If not, wait till next year. I recommend it. It will be worth the wait.
